Five Ube Cheese Pandesal variants available in Metro Cebu

To us, nothing beats Chef Ronald's Ube Cheese Pan de Sialo.

        Soft, chewy ube cheese pandesal have made a comeback these days and have found its way back into the hearts of many Cebuanos.  This purple yam salt bread has flavorful cheese filling inside so it comes with a hefty surprise when you bite into it.

        My boys are not really fond of ube, but my sister-in-law and I were curious as to which among the many variants sold in the city were the best ones.  We got to try five of them and here we share our two cents’ worth for quick reference.


1.  Ube Cheese Pan de Sialo

        For us this is, hand’s down, the best.  The bread is amazingly soft and chewy.  The filling, oh wow, amazing!  Chef Ronald Villavelez is the genius behind this pastry.  He uses cream cheese for filling if requested, but most times, he uses aged cheddar.  Of course he uses only fresh, real-deal ube roots.  As for the bread, he uses precision in measurements, timing and temperature when mixing ingredients and making his dough.

        My dough goes through a different process, using precise modernist techniques, unlike the usual, traditional methods to achieve an almost brioche-like texture and quality.  It took me two months to work on the recipe, and a lot of trial and error,” he said.  It helps that Chemistry was his favorite subject at the National Science High School!

2.  Cardinal Bakeshop’s Ube Cheese Pandesal

        In a far second, (yes, far – Sialo is really that good) is Cardinal Bakeshop’s Ube Cheese Pandesal.  Well, Cardinal Bakeshop is Cardinal Bakeshop - it never fails to please the palate.  So their version of the ube cheese pandesal is great!

        I didn’t really get to talk to the baker but I have a feeling they used both ube powder infused in the dough and incorporated in the cheese filling.  Well, just correct me if I’m wrong please – do so in the comments section and I’d gladly change my text.

3.  Homebakers’ Ube Cheese desal

        There is a slight difference between second and third, which is Homebakers’ Ube Cheese desal.  The difference lies in the size and thickness of the filling.  Of course, the packaging of Cardinal Bakeshop is superb.  It kinda adds to the overall experience, so to speak.  If you’re not too particular about those, the taste difference is minimal.  But the difference is very much explained with the price.

4.  Julie’s Bakeshop’s Ube Cheese de Sal

        Julie’s Bakeshop continues to amaze me.  Their version of the ube cheese pandesal comes in fourth out of five!  It comes as the cheapest too.  It’s bread is soft - especially if you get it newly baked.  The cheese filling is sparse but it’s okay.  Heck, considering the price, not bad at all!

5.  Kaffee Alde’s Ube Cheese Pandesal

        Kaffee Alde’s Ube Cheese Pandesal was a bit of a disappointment.  Priced at P18, it fell short of Julie’s take on the trending bread product which was priced much lower than theirs.  Kaffee Alde’s bread was hard and largely aerated.  Trust me, we bought them right after they were baked, or maybe we bought it when the baker had a bad day.  Air bubbles abound so you can probably squeeze in the bread into a very small chunk if you want to.  I guess that’s not their specialty.  Their Tres Leches cake is awesome though.
